Course 1

Shaved Duck Prociutto with Charred Pineapple, Grape Salad and Balsamic Drizzle

Pairing:  Les Bulles, sparkling Vidal with modest acidity showing tropical fruit notes

Course 2

Smoked Salmon Vol-au-Vent, with Pickled Cucumber & Chive Salsa

Pairing:  Vidal 2017, a bright acidic aromatic white with grapefruit & pineapple notes

Course 3

Wild Boar, Forest Mushroom Tartine & Asiago Cheese

Pairing:  Chardonnay 2017, fermented in aged French oak. With notes of pear, beeswax and wet flint. Nutty, buttery with a balanced minerality

Course 4

Whole Striploin Roast, Crusted with Black Pepper and Herbs, Seasoned New Potatoes, Broccoli Spears and Gorgonzola Blue Demi-Glace

Pairing:  Cabernet Franc 2017, with delicious dark berry notes and hints of mint and leather. Aged in Grand Cru French oak barrels

Course 5

Lemon Glazed Gingerbread Cake

Pairing:  Scheuermann's own apple cider, yeast fermented and unfiltered, reminiscent of ciders from Normandy
